I'm Back

Hello hello hello. Oh how I have missed all my blogging loves so much! I can't believe I have gone this long without posting! With work and classes piling up more and more, my time just seems to slip away from me in the day!! But I finally feel like I have found my routine and gotten into the groove of things so I'm back, ready to cook, ready to run, and ready to blog <3
So I'll start off with a sweet, light, tasty bite of summer.
This recipe is so easy, light, and quick to make.  So instead of apple pie for the fourth - why not make some cake?! I promise you won't regret it : )
Hawaiian Wedding Cake.
2 cups whole wheat flour
4 oz cream cheese soften
2 cups confectioners’ sugar
1 teaspoon vanilla extra
1 tsp baking soda
1 20oz can of crush pineapple with juice
1 cup chopped walnuts
1 cup coconut
2 cups of sugar - I used 1 cup of Splenda blend mix
2 tbs flax seeds
1/2 stick unsalted butter
2 eggs lightly beaten
Coat a 13x9x2inch baking dish with nonstick spray.
In a large bowl mix flour, sugar, baking soda, eggs, pineapple with juice, coconut and one cup of walnuts.
Stir with a wooden spoon until just combined and all ingredients are moist.
Spoon mixture into a prepared pan.
Con to baking without your little brother or sister around - there is always better left over in the bowl.  It's so hard to just put it in the sink without licking it all clean!

Bake at 325 for 35-40 minutes or until took pick inserted in the center of the cake comes out clean
Remove from oven and let cool on a wire rack.

Dont forget this important step:
Take a nap while cake is cooling. It'll make the cake taste that much better. Promise.
 icing:
Beat butter and cream cheese until smooth.
Gradually beat in confectioners’ sugar and vanilla.
Spread on cake and garnish edges with chopped walnuts.
I highly recommend making this for your fourth party this weekend. It is so easy and yummy - and I promise no one will notice how unpatriotic it is!
I can't wait to catch up on everyone's blogs! Hope you are enjoying the warm weather!
Any good 4th of July plans?!?!?!

  4. So glad you're back! That cake sounds awesome. I have been craving walnuts in baked goods. It's so weird because I usually hate walnuts. Though I've found lately that I'm trying foods that I thought I hated to find that I love them, so I'll have to give it a go!

ps. I'm glad you enjoyed the banana with peanut butter :) best snack ever!
