Hello hello hello. Oh how I have missed all my blogging loves so much! I can't believe I have gone this long without posting! With work and classes piling up more and more, my time just seems to slip away from me in the day!! But I finally feel like I have found my routine and gotten into the groove of things so I'm back, ready to cook, ready to run, and ready to blog <3
So I'll start off with a sweet, light, tasty bite of summer.
This recipe is so easy, light, and quick to make. So instead of apple pie for the fourth - why not make some cake?! I promise you won't regret it : )
Hawaiian Wedding Cake.
2 cups whole wheat flour
4 oz cream cheese soften
2 cups confectioners’ sugar
1 teaspoon vanilla extra
1 tsp baking soda
1 20oz can of crush pineapple with juice
1 cup chopped walnuts
1 cup coconut
2 cups of sugar - I used 1 cup of Splenda blend mix
2 tbs flax seeds
1/2 stick unsalted butter
2 eggs lightly beaten

1 tsp baking soda

1 cup coconut
2 cups of sugar - I used 1 cup of Splenda blend mix
2 tbs flax seeds
1/2 stick unsalted butter
2 eggs lightly beaten
Coat a 13x9x2inch baking dish with nonstick spray.
In a large bowl mix flour, sugar, baking soda, eggs, pineapple with juice, coconut and one cup of walnuts.
Stir with a wooden spoon until just combined and all ingredients are moist.
Spoon mixture into a prepared pan.
Con to baking without your little brother or sister around - there is always better left over in the bowl. It's so hard to just put it in the sink without licking it all clean!
Bake at 325 for 35-40 minutes or until took pick inserted in the center of the cake comes out clean
Remove from oven and let cool on a wire rack.
Dont forget this important step:
Take a nap while cake is cooling. It'll make the cake taste that much better. Promise.
Beat butter and cream cheese until smooth.
Gradually beat in confectioners’ sugar and vanilla.
Spread on cake and garnish edges with chopped walnuts.
Oh, yum! That last picture with the icing dripping off looks delicious :)

ReplyDeleteSo glad you're back! That cake sounds awesome. I have been craving walnuts in baked goods. It's so weird because I usually hate walnuts. Though I've found lately that I'm trying foods that I thought I hated to find that I love them, so I'll have to give it a go!

This looks like carrot cake, which I love by the way. That gooey cream cheese icing looks to die for. Yummmmm.
