no leftovers here

 I truly appreciate it more than you know!!! The past two days I have been pretty sore from the half so instead of working out by running, I have been baking, because strirring a batter is a workout for your arms! Right?!?! Let's just pretend so, because my body needed some rest and relaxation the past two days!
Because I love my sister so much, I made her favorite summertime recipe: Blueberry and Peach Cobbler.  It is so simple and fresh and quick, perfect for dessert, snack, or even breakfast [as I'm eating a slice and drinking my coffee]!

Preheat oven to 350°
1 1/4 cup flour
1 cup sugar
2 tsp baking powder
1 cup evaporated milk
1/4 cup butter, melted
2 tsp vanilla
4 medium peaches - peeled, sweetened, sliced
1 cup fresh blueberries

Lightly spray 10" pie pan with non stick spray and set aside.  Combine flour and sugar, stir in baking powder and mix well.
In a separate bowl, combine milk, butter, and vanilla [I add a touch more for yummyness] - and stir until well combined.  Add flour mixture into liquid mixture and stir until smooth.  Pour mixture into pie pan.
Place peaches on top [I sometimes sprinkle a little bit more sugar to  make sure peaches are sweet] and spoon to lightly cover them with batter.
 Top with blueberries and lightly stir to cover with cobbler mixture.
Bake for 45-50 min until crust is golden brown.
   Serve hot, with vanilla bean ice cream!
If you do make this, I can't gaurentee there will be leftovers in the pie pan after 6 hours!!

  6. That cobbler sounds so summery and delicious! I love eating baked goods for breakfast. It's such a fun way to start the day off on a good note.
